Was a huge hit at thanksgiving. I did two trial runs of this recipe before making it for thanksgiving and my findings are as follows. For the swirl, I recommend swirling the batter at each layer before adding the next layer; this results in the best swirl pattern. Additionally, reserving about 2.5-3 cups of the plain batter seemed to be the correct ratio for accomplishing the swirl. For cooking, I found I needed to cook with heat for about 1 hour 10 minutes, oven off for about 25-30 mins, and door cracked the amount of time listed. Make sure the center is firm but still moves before removing from the oven! The submerged water bath method kept failing, so I switched to the separate racks method. If you do this, use hot/boiling water in the pan and put it in the oven as the oven pre-heats so it is humid when you insert the cheesecake. I had no cracking following this method.

This is for one cheesecake, Allen. However, it is quite thick. I bet you could double the crust recipe and then divide the batter between two pans for two thinner cheesecakes. You would need to adjust the bake time and I haven’t tried it, so I can’t say for sure if it’s enough batter. Happy Thanksgiving!
