In reply to Dianne. I actually make this all the time now with pre-cooked chicken because one of my girls is vegetarian, but we ALL love this recipe and I make it weekly. It cooks up quickly if you're not waiting for the chicken to cook through, but it would also be fine to let it simmer for a few hours even without the chicken. Toss the rotisserie chicken in at the end when you add the cheese and cream.

can you make this with cooked rotisserie chicken? would it alter the cooking time?
