Sure! The cheese will give it some nice creaminess. You could also add an alternative milk, but I haven’t personally tried it.

I actually make this all the time now with pre-cooked chicken because one of my girls is vegetarian, but we ALL love this recipe and I make it weekly. It cooks up quickly if you’re not waiting for the chicken to cook through, but it would also be fine to let it simmer for a few hours even without the chicken. Toss the rotisserie chicken in at the end when you add the cheese and cream.
