very easy and delicious. We don’t eat beef so , I substituted ground chicken and added frozen corn to entice the kids ! They loved it!! This is a keeper.

Yes, I would drain if you have excess grease. If you use a 90% lean ground beef, you probably won’t need to drain.

Yes, it’s about 2 cups of cheese per layer. You can always adjust the amount to your liking.

Hi Debbie, I haven’t personally tried freezing it, but the components all freeze well, I think it should be fine. Might make the corn tortillas a bit soggy, but overall it will hold up well.
