I did this recently and it is possible, however, because the carrot mixture is going from the fridge to the oven instead of being hot from the carrots just cooked, it takes a whole lot longer to cook. If I were going to make ahead again, I would pre-cook the carrots and store in the fridge. I would pre-measure all of the other ingredients and store in the fridge. Then, at cooking time, I would reheat the carrots until hot in the microwave and then blend everything together and pop it into the oven.
